Healthy Recipe: Chocolate cherry almond granola bars

Hey Fitness friends! I just created my new favourite on-the-go snack food, and couldn’t wait to share the healthy recipe with you!

These ridiculously easy, no-bake bars are simply the tastiest whole-food snack ever. They’re vegan, high in protein and fibre, packed with nutrients and have no added sugars (the dried fruit does contain lots of naturally occurring sugar though, so if you’re on a low-sugar diet, they should be an occasional treat).

I’ll use these for a quick energy boost before teaching an intense class like BodySculpt, or to refuel after a strength training session.

Ingredients

  • 1 cup Rolled oats
  • 1/4 cup Hemp hearts
  • 1/4 cup Slivered almonds
  • 2 tablespoons Unsweetened cocoa powder
  • 2 tablespoons Raw cacao nibs
  • 1/2 cup Dried cherries (make sure they don’t contain added sugars)
  • 1/4 cup Dried dates
  • 1/2 cup Peanut (or other nut) butter
  • 1 teaspoon Vanilla extract

Method

Mix the dry ingredients in a bowl. Soak the dried fruit in hot water until soft, then drain. Pulse the soaked, drained fruit along with the nut butter and vanilla extract. Blend the mixture with the dry ingredients and press into a baking pan lined with waxed paper. Set in the freezer for about an hour. Cut into bars and store in fridge or freezer – they’re crumbly when they warm up!
