Christie’s Avocado Mango Coconut Smoothie
1 cold, very ripe avocado
1 Ataulfo mango (the small yellow kind)
3 tablespoons plain Greek yogurt
1 tablespoon shredded coconut
1 teaspoon honey or maple syrup (optional)
A little milk if needed to decrease thickness
Throw everything in a blender and process until smooth. Enjoy!

I recently made Chickpea Chocolate Chip Cookies, with no flour. It sounds strange but they were surprisingly very good. I’ll bring in the recipe tomorrow.
